Tuna Cakes with Garlic Infused Aioli

 

 

Servings: makes 4 medium tuna cakes (serves 2)

Ingredients:

  • 1 egg
  • 2 tablespoons of mayonnaise
  • Juice of a quarter of a lemon
  • 2 cans of tuna fish, 4 ounces, drained
  • 1/4 cup almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Pinch of cayenne pepper (optional)
  • 2 tablespoons of butter
  • 2 lemon wedges

Breading:

  • 1/4 cup almond flour
  • 1/2 teaspoon salt
  • 1/4 tsp ground black pepper

Optional garlic infused aioli:

  • 1 tablespoon of mayonnaise
  • Juice of an eighth of a lemon
  • 3 drops of garlic infused olive oil
  • 1/8 teaspoon of parsley
  • Pinch of salt
  • Pinch of pepper

Instructions:

  1. In a medium bowl, whisk together the egg, mayonnaise, and lemon juice.
  1. Add tuna fish and mash with a fork until well-combined.
  1. Mix in almond flour, salt, black pepper, and optional cayenne pepper.
  1. For the breading, pour almond flour onto a large plate or into a shallow container. If FODMAPs are not a concern, you can use more almond flour for a thicker coating.
  1. Toss almond flour with salt and pepper.
  1. Separate tuna mixture into four evenly-sized balls.
  1. Heat a large pan over medium heat.
  1. Roll tuna balls in the breading. Make sure to coat the entire outside of each ball with the breading.
  1. Add butter to the heated pan and place the tuna balls in the pan.
  1. Use a fork to press the balls into a “cake” shape. Be careful not to scratch your nonstick pan!
  1. Cook for 6-8 minutes per side, or until the tuna cakes are browned on both sides.
  1. If making aioli, whisk together ingredients in a small bowl and drizzle on top of the tuna cakes. Serve with a lemon wedge.
